Cibolo Junction Bizcochito Breakfast Bread

Reminiscent of New Mexico's traditional holiday cookie, this moist and light breakfast bread exudes an antique European air and provides a delightful and wonderful complement to your favorite morning coffee or tea.

Additions:
1 egg
1 cup milk
2 tsp vegetable oil
1 tsp sugar (optional)
1/3 tsp cinnamon (optional)
Cooking Directions:

Preheat oven to 350F.

Grease 8x8x2 inch pan or 12 count muffin tin.

Mix sugar and cinnamon in a small bowl, set aside.

Combine remaining ingredients, stir with a spoon until batter is blended (about 1 minute).

Pour batter into pan of muffin tin and sprinkle cinnamon and sugar blend on top.

Bake 35 minutes or until brown.

Optional: add some fresh orange zest or chopped nuts to batter.

Enriched flour, (wheat flour, malted barley, flour, niacin, iron, thiamin mononitrate, riboflavin, folic acid), sugar, orange pell, spice,, orange juice powder (corn syrup solids, natural flavor), leavening (baking powder, cornstarch, calcium phosphate), salt.
