Farmstand Soup Co. Summer in the Garden Split Pea Soup Mix

Upgrading this all time favorite by adding leeks makes this organic based soup one of my "must have" dinners.

Additions:
4 oz bacon, diced small
1 cup celery, chopped
2 cups diced leeks
2 quarts chicken stock
salt and pepper to taste
Cooking Directions:

Fry bacon on low heat until crispy. Remove and reserve bacon pieces for garnish.

Add in the leeks and cook for 2 minutes over low heat.

Sort through and rinse the split peas. Spread peas across the bottom of your slow cooker along with spice packet, clery and stock. Cover and bring to a boil.

Reduce heat to low and simmer for 1 hour or until the peas are falling apart. Stir with a whisk to break up the peas and lightly thicken the soup.

Salt and pepper to taste. Locate and remove the bay leaf

Add chopped bacon and stir.
Serving suggestion: top with herbed croutons and serve with crusted bread, a nice white wine and a fresh garden salad..

Organic split peas (green, yellow), dried carrots (corn starch added), dried onions, dried whole peas, tomato flakes, celery flakes, bell peppers, parsley, black pepper, thyme, bay leaf.
