Additions:
2 qts. water
3 skinless chcken thighs
2 cups sliced fresh okra
8oz sliced sausage
3/4 cup diced celery
1 cup diced green peppers
2 cups diced onions
4 cloved chopped garlic
2 bunches sliced green onions
3 Tbsp. butter
1 can whole tomatoes
1 tsp dried thyme
2 tsp granulated garlic
1 tsp ground black pepper
1 Tbsp creole or blackening spices
2 bay leaves
1 tsp sea salt
4 cups cooked rice
Cooking Directions:

Sort through and thoroughly wash beans. Soak beans 4 hours or overnight in water to cover by 2 inches.

The next day drain and rinse the beans. In a large pot (6-8 qt. capacity) place the beans along with the water and chicken in pot. Cover and bring soup to a boil. Lower heat to medium low and cook 1 hour, stirring occasionally. Remove from heat and let cool.

Remove chicken bones and fat. Dice meat.

Return chicken to pot along with okra and simmer.

Place butter into a large saucepan over medium low heat and begin to brown. Add sausage and saute for 3-5 minutes.

Add celery, green peppers, onions and garlic. Saute until tender. Allow the vegetables to stick to the bottom of the pan. Scrape the bottom of pan.

Add sauteed veggies and sausage to the beans along with the tomatoes and spices. Cover and bring to a boil. Lower heat to medium low andcook for an additional 40 minutes. Add green onions and simmer for 10 minutes. Discard bay leaves. Salt and pepper to taste.
