Additions:
3 qts. water
1 smoked turkey leg
6 oz cooked smoked turkey sausage
3/4 cup diced celery
2 cups diced onions
4 cloved chopped garlic
1 can whole tomatoes
1 tsp dried parsley
1/2 tsp dried thyme
1/4 tsp ground cloves
1/2 tsp ground black pepper
2 bay leaves
sea salt
Cooking Directions:

Sort through and thoroughly wash beans. Soak beans 4 hours or overnight in water to cover by 2 inches.

In a large pot (6-8 qt. capacity) place the beans along with the water and turkey leg in pot. Cover and bring soup to a boil. Lower heat to medium low and cook 1 hour, stirring occasionally.

Add tomatoes, spices, vegetables, garlic and sausage into the pot and stir. Cover and bring back to a boil. Turn heat down to medium low and cook for 90 more minutes. Stir every 30 minutes.

Remove turkey leg. Discard bones and fat. Dice meat and return to soup.

Salt and pepper to taste.
