Additions:
1/2 lb sliced sweet italian sausage
1 cup diced celery
1 cup chopped carrots
1 cups diced onions
2 cloves chopped garlic
2 cups chopped spinach
1 Tbsp. olive oil
1 can diced tomatoes
8 cups beef broth
1/2 tsp dried oregano
1/4 tsp dried thyme
1 tsp dried basil
1/4 tsp red pepper flakes
2 bay leaves
1/2 tsp black pepper
sea salt to taste
Cooking Directions:

Sort through and thoroughly wash lentils.

Remove casing from the sausage.

Place the oil in a 6 qt stock pot over medium heat. Add the sausage and brown 5 minutes.

Remove the sausage from the pot and drain off fat. Add onions, celery and carrots. Saute for 3 minutes. Add cooked sausage back into the pot along with garlic, broth, tomatoes and spices.

Bring to a simmer and add lentils.

Cover and bring to a boil. Turn to medium low and cook for 45 minutes. Add spinach. Cook for 5 additional minutes. Remove bay leaf. Adjust seasonings to your taste.
