Urban Pantry Essentials Southwest Bean Blend

1 qt water
1 skin on chicken breast
1 diced red bell pepper
1 diced jalapeno pepper
1 chopped sweet potato
juice of 2 limes
1 bunch sliced green onions
2 cups diced onions
4 cloved chopped garlic
2 Tbsp ground chile powder
1 T olive oil
1 1/2 tsp dried oregano
2 tsp. ground cumin
2 tsp granulated garlic
2 cans diced tomatoes w/green chiles
black pepper to taste
1 tsp sea salt
 
 

Cooking Directions:

  1. Sort through and thoroughly wash beans. Soak beans 4 hours or overnight in water to cover by 2 inches.
  2. The next day drain and rinse the beans. In a large pot (6-8 qt. capacity) place the beans along with the water and chicken stock in the pot.
  3. Cover and bring beans to a boil.  Lower heat to medium low and cook 1 hour, stirring occasionally.  Remove from heat and set aside.
  4. Season chicken w/salt adn 1 tsp of the chili powder.
  5. Heat oil in heavy sock pot over medium heat.  Brown the chicken.  Remove and place chicken into simmering beans.
  6. Add garlic, onions, peppers and jalapenos to the pot.  Saute 2-3 minutes.  Add sweet potatoes and spices.  Saute for 3 additional minutes.  Add this sauto to pot of beans alont with the tomatoes and green chiles.  Simmer soup an additional 45 minutes.
  7. Remove chicken, discard bones and fat.  Dice meat and add back into soup.
  8. Stir in fresh-squeezed lime juice and sliced green onions.  Adjust seasonings to taste and cook 5 minutes.

Organic black beans, organic small red beans, organic red kidney beans, organic pinto beans, organic pink beans and organic anasazi beans.

This Southwest Soup is absolutely delicious! The recipe made this soup one of our favorites. I followed the recipe and it made a huge pot that served 8-10 but my husband and I loved it so much we ate it practically every night for over a week! We will make the next pot and invite neighbors over since they all love bean soup. Living in Phoenix makes this recipe something that all of them will want to have for their very own!! Thank you!!!
