Camp Traditions Beef Barley Soup Mix

This soup is a hearty favorite and super great taking it on the go in a thermos.

7 1/2 cups water
 

Cooking Directions:

 
Bring 7 1/2 cups of water to a boil. Add soup mix and blend well. Return soup to a boil then reduce heat. Simmer 30-35 minutes, stir occasionally.
 

Ingredients:

 
Barley, dehydrated vegetables (potatoes, carrots, onions, tomatoes, peas, leeks, parsley), modified corn starch, salt, autolyzed yeast extract, palm oil, sugar, natural flavors, maltodextrin, burgundy wine solids, caramel color, beef fat, hydrolyzed corn, wheat & soy protein, disodium inosinate and disodium guanylate, beef powder, spice and sulfiting agents.

I like mixes that aren't overly seasoned; that way we can add salt/pepper to the level we like. So many mixes are overly spiced to cover up that there is no other flavor. This soup has a really beefy flavor. Like from a roasting pan.

When I started making this mix, I was worried that the water to mix ratio was off and that it would be too thin. But after cooking, it was a perfect consistancy. I added ground beef and the soup was rich and flavorful. It was missing something - black pepper - and I couldn't find any to add. I think that would have made this soup even better!

I was somewhat disappointed by this soup. Maybe I am a purist but I found this soup lacking in appropriate spices. There was plenty of barley, a good beef bouillon and the proper amount of thickeners. But something was missing. It tasted good and I enjoyed it but it was not outstanding. Will I purchase this soup again? Probably not.
