Leonard Mountain 3 Amigos Enchilada Stew

One of their best sellers, this soup took 1st prize at the prestigous Atlanta Gourmet Food Show.  So similar to a tortilla soup, but in this stew they use brown beans in place of the black beans and add potato flakes to the mix so that it thickens up a bit and becomes more like a stew. It has the same great taste, but the rich taste of the brown beans are present in this hearty south of the border taste. We like it with chicken or hamburger.

Cooking Directions:

  • Add contents of both packages to water.
  • Bring to boil, stirring to mix.
  • Reduce heat and simmer 20-30 minutes.

Serving Suggestions:

  • You can add chicken to this mix as well as tomatoes or cheese (or all three).
  • Serve with tortilla chips and garnish with sour cream or guacamole.
  • Great crock pot mix - directions on the box.

Dehydrated vegetables: onions, celery, green chili, tomatoes, corn, parsley, potatoes, pinto beans and seasonings (chili powder, imitation chicken soup seasoning (vegetable based), granulated onion and garlic, black pepper, hot peppers).

Makes an great stew, we'll be adding beef next time we cook this one. Will be trying the Peppadew Stew Mix from them soon.

delicious!!! I added some leftover Thanksgiving turkey (cut up), a can of stewed tomatoes, and some cheese - soooo good, even my 3 year old liked it!
