Sudbury Soup Black Bean Soup

Often found in Latin America cultures as a side dish, black beans become fertile ground for flavor and substance as a soup. By adding vegetables, pancetta or your favorite bacon, you can create incredible depth of flavor. Serve with rice and savor.

Additions:
1 onion
1 celery stalk
2 carrots
1 green pepper
3 14.5oz cans chicken or vegetable broth
6 cups water
Cooking Directions:
- Rinse and pick over beans and rice.
- Chop carrots, onion, celery and pepper.
- Add spice mix and all ingredients to soup pot and simmer 2 1/2 to 3 hours.
- Add more broth and water as needed.
