Sudbury Soup Spinach Lentil Soup

Paired with spinach, this lentil soup becomes a lighter, full flavored soup.  Spinach and other leafy greens are good for your skin.  You also can enjoy good medicine with lentils and other delicious foods and flavors.

1 onion
1 green pepper
1 celery stalk
1 16oz. can crushed tomatoes
1 Tbsp. red wine vinegar
1 10oz. pkg. frozen chopped spinach
2 14oz cans beef, chicken or vegetable broth
5 cups water 


Cooking Directions:

  • Rinse and pick through lentils and rice.
  • Chop onion, celery and pepper.
  • Add spice mix and all ingredients to soup pot and simmer 1 hour.
  • Add more broth and water as needed. Remove bay leaves before serving.
