Yellow split peas are a great source of protein and are a very lean healthy food.  Paired with butternut squash, this soup is rich, sweet and very warming.

1 onion
1 celery stalk
1 20oz. pkg. fresh pelled squash
2 14oz cans chicken or vegetable broth
5 cups water 


Cooking Directions:

  • Rinse and pick through peas and barley.
  • Chop onion, celery and squash.
  • Add spice mix and all ingredients to soup pot and simmer 1 hour.
  • Add more broth and water as needed.

Ingredients:

Split peas, barley, garlic, spices.
