Leonard Mountain Mama Leone's Rainbow Pasta Salad

A lovely Italian Pasta Salad with a packet of dressing included in the bag. The packet will make into an oil and vinegar dressing with a flavor of old Italy. We include the bottle of Extra Virgin Olive Oil and then you will need to add a little bit of vinegar as an additional ingredient. This salad is great with or without the addition of meat. You can serve this cold and it will keep for awhile in the fridge.

Additions:
1 green or yellow bell pepper, diced
1 small red onion, finely chopped
2 large ripe tomoates, cut into small wedges
2 cups broccoli florets, raw or steamed
6 oz. mozzarella cheese, cut into 1/2" cubes (optional)
1/4 cup olive or peanut oil
1/4 cup red wine vinegar
Cooking Directions:
Heat 4 quarts water to boiling, stir in pasta and return to boil. Cook for 5-8 minutes. Do not over cook- pasta should be quite firm for salads. Rinse with cold water until cool. Mix spice packet with oil and vinegar in blender or shaker. Add vegetables to pasta. Pour dressing over pasta and toss chill at least 1-2 hours. Serves 6 people.

Semolina, vegetables, garlic, salt, pepper, spices.
