Yo Amigo! Papas – sorry I got carried away – I mean Potatoes with a Mexican Flair. If you don’t like rice – try some of these Sassy Southwest Potatoes! They are ‘sunsational’!

Cooking Directions:

Heat wter to a rolling boil in a medium sauce pan. Remove from heat. Add potatoes and stir with a fork until well blended and reached the desired consistency you would like. Salt and pepper to taste.
You may want to be creative! Top with sour cream, salsa and cheese.
For richer potatoes substitute milk for water and add 3 Tbsp. butter or margarine.
