In  the Southwest, they know how great roasted corn tastes. In that tradition, authentic seasonings, mild green chilies and Monterrey Jack cheese are combined roasting to enhance the flavor of 2 premium sweet corns.

Additions:

 
 4 1/2 Cups water
 

Cooking Directions:

  • Whisk mix into water
  • Bring to a boil, reduce heat and simmer 8-10 minutes stirring often from the bottom of the pan
  • If soup is too thin, cook a little longer, if too thick, add a bit more water.
  • Add 4-6 drops of hot pepper sauce to taste (not included).

Variations/Serving Suggestions:

  • For a heartier soup, add one cup of cooked, shredded chicken (about two breasts) at the beginning of the simmer.
  • Garnish with one or any combination of the following: chopped roasted peanuts, pico de gallo salsa, shredded cheese or even oven toasted tortilla strips.
  • Serve warmed tortillas or a crusty loaf of bread.

This is one of my favorite soups! I generally add some frozen corn, just to bulk it up. It's great served with asiago cheese bread.

Add the chicken and if you are like me add a small can of corn. serve on top of tortilla chips.
