Maggie and Mary's Pot Roast Soup

A rich, beefy soup with carrots and potatoes. According to one food writer, "this soup hits the pot roast flavor right on the mark!" This is comfort food!

4 1/2 cups water
 

Cooking Directions:

  • Place 4 1/2 cups hot water in large pot, add powder base blending well with whisk. Bring to a rolling boil.
  • Add potatoes, blend well.
  • Simmer 45 minutes covered stirring occasionally.

Variations/Additions:

  • Add diced, drained tomatoes.
  • Add a dash of ground thyme.
  • Add cubes of left-over cooked roast beef.

Aunt Obbie's Beef Stew

INGREDIENTS:
1 box Pot Roast Soup
1 can corn
Baking mix (Bisquick* type)
Leftover beef (steak, roast, etc.)
2-3 carrots

DIRECTIONS:
Prepare soup according to package instructions. Add cut up meat. Simmer 30 minutes. Add drained corn, and carrots cut into chunks. Simmer additional 30 minutes. Prior to serving, prepare dumplings according to baking mix instructions. Drop dumplings onto boiling stew, cover with lid: cook according to baking mix instructions. (Option: Omit dumplings, serve over mashed potatoes.)

I was pleasently suprised how much of a beefy flavor this had from a mix as well as how chunky it was with potatoes and vegetables. Will definately buy this again!
