14.5 oz. can petite diced tomatoes
3/4 cup raisins
3/4 cup dried apricots (cut in halves)
3.5-4 lbs. boneless skinless chicken thighs or breasts
4 cups of low sodium chicken broth
 

Cooking Directions:

 
Place uncooked chicken in bottom of cooker.  Layer contents of vegetable and spice packets over chicken.  Top evenly with diced tomatoes.  Slowly pour chicken broth over ingredients.  Do Not Stir.  Cover & cook on high for 4.5 to 5.5 hours on low for 7.5 to 8.5 hours.  Do not lift lid while cooking.  Add couscous 1/2 hour before serving, stir into the broth and recover cooker.  When ready to serve, add salt to taste. 

Serving Suggestions:

 
Garnish with lemon slices, fesh cilantro and mint leaves.  Serve with olive tapenade.  Top with pinoli nuts, macadamia nuts, cashews or slivered almonds.  Serve with sliced fresh peaches or apricots.  Top with shredded coconut.  Serve with flat bread.

Couscous, dehydrated vegetables (carrots, onions, celery), garlic, brown sugar, orange pell, ginger, black pepper, cinnamon, allspice, turmeric, nutmeg, cayenne, coriander, cumin, cardamom & cloves.

loved this dish...a friend bought a package when i did and coincidentally we prepared it the same day....we both loved it so much we bought more...however now we arent able to find any as the store we found it doesnt carry it...:(

The seasonings were really balanced. I just let the couscous stay in the pot before we ate it. It seemed to make everything blander. I put cilantro in it and ate it with a flat bread. If you like Moroccan food you will like this.
