Delicae Gourmet Spanish Hacienda Paella

Additions:
14.5 oz. can petite diced tomatoes
2 lbs. boneless skinless chicken thighs
1 lb. boneless pork loin roast
1 lb. sausage sliced into 1/2" rounds
4 cups of low sodium chicken broth
Cooking Directions:
Place pork roast in bottom center of cooker. Place chicken around the roast. Place sliced sausage over meat. Sprinkle spice packet over meat. layer contents of vegetable packet and rice over spices. Top evenly with diced tomatoes. Slowly pour chicken broth over ingredients. Do Not Stir. Cover & cook on high for 4.5 to 5.5 hours on low for 7 to 8 hours. Do not lift lid while cooking. When ready to serve, add salt to taste.
Serving Suggestions:
15 minutes before serving add a bag of frozen peas to the slow cooker pot. Shell fish option: 20 minutes before serving add scallops & shrimp in the shell to the top of slow cooker. boil clams & mussels in water until they open. Steam lobster & squid rings. Arrange seafood on top of each serving plate. Serve with lemon slices. For authentic Spanish flavor add 1 tsp. of saffron threads to the slow cooker pot.
