Leonard Mountain 4-Amigos Tortilla Soup Mix

Leonard Mountain mixes together some great veggies and adds black beans and mixes up some of the best seasoning they could combine.  Add some water and let it cook for about 20 minutes. Then we thought that it would taste pretty good if we added a little hamburger or chicken to it. It sure is mighty tasty!

Additions:

 
6 cups water
 

Cooking Directions:

  • Add contents of package to water.
  • Bring to boil, stirring to mix.
  • Reduce heat and simmer 20-30 minutes.
  • Serve with tortilla chips.
  • Optional - saute chicken or ground beef and add to soup.

Crock Pot Method:

  • Combine contents and water.
  • If you would like to include chicken, put uncooked chicken in at the start.
  • Simmer on high for an hour.
  • Set to low for 6-10 hours.

Black beans, dehydrated corn, dehydrated vegetables and good seasonings.

The sodium content is so low (yet so tasty), that I didn't worry about adding canned SouthWest corn (with green peppers, etc), and diced up chicken breast. Poured it over egg (no yolk) noodles and GOSH IT's GOOD!

This is the best stuff..We had it on a cold ,wet day in the mountains. It was wonderful...We added a dollop of sour cream and a little leftover chicken. Wonderful!!!
