Cherchies - 9 Spice Red Bean Chili

Cherchies has decided to discontinue this soup and we no longer have it in stock. We have encouraged them to bring it back as it has sold well for us, so if they bring it back, we will get it!
Hot & Spicy!! This chili mix combines freeze-dried corn, 9 spices and red beans. It's hot, but not overwelming. Makes approximately 9 (1 cup) servings.

Additions:
6 1/2 cups water
28 oz can peeled chopped tomatoes
8 oz can tomato sauce
2 tbsp. olive oil
4 garlic cloves, crushed
2 medium onions, chopped
1 1/2 cups Monterey Jack cheese, grated
Cooking Directions:
Bean preperation:

Beans are harvested in their natural state and even with the most careful processing, foreign substrances such as small stones may appear. Examine beans closely prior to preparation.

Rinse beans thoroughly in cold water.

Quick soak method: put beans in large pot, adding enough water to cover by 2 inches. Bring to a boil, cooking for 2 minutes. Remove from heat, cover and let sit for 1 hour.

Overnight soak method: in a bowl, cover beans with water and soak overnight.

Drain and rinse beans.
Soup preperation:

To soup pot, add beans, water and seasoning packet. Bring to a boil, reduce heat and simmer for 60 minutes.

While beans are cooking, saute garlic and onion in olive oil.

After beans have simmered an hour, add, onions, garlic, corn packet, chopped tomatoes and tomato sauce and bring to a boil. Reduce heat and simmer 30 minutes longer, stirring occasionally.

Remove from heat and stir in cheese.
Serving Suggestions:

If you choose to, add browned pork or beef cubes, ground turkey or Italian sausage.

For a spicier chili, add hot sauce to taste.

Garnish with a dollop of sour cream topped with salsa.
Ingredients:
Red beans, freeze dried US grade #1 corn, chili spices, salt, paprika, sugar, dehydrated vegetables (onion and garlic, spinach, parsley, celery), hydrolyzed soy protein, caramel powder, oleoresin paprika, (silicon dioxide added to prevent caking).
