Cherchies Cajun Sausage Soup

Hot & Spicy!! This Louisiana inspired culinary delight will satisfy your Cajun appetite. Add sweet or hot sausage for a delicious and spicy-hot meal. Makes approximately 11 (1 cup) servings.

Additions:
7 cups water
2 tbsp. olive oil
2 garlic cloves, crushed
1 small onion, chopped
1 lb sweet or Italian sausage, sliced our ground
1 can (16oz) tomato sauce
Cooking Directions:
Bean preperation:

Beans are harvested in their natural state and even with the most careful processing, foreign substrances such as small stones may appear. Examine beans closely prior to preparation.

Rinse beans thoroughly in cold water.

Quick soak method: put beans in large pot, adding enough water to cover by 2 inches. Bring to a boil, cooking for 2 minutes. Remove from heat, cover and let sit for 1 hour.

Overnight soak method: in a bowl, cover beans with water and soak overnight.

Drain and rinse beans.
Soup preperation:

To soup pot, add beans and water. Bring to a boil, reduce heat and simmer for 40 minutes.

While beans are cooking, saute garlic and onion in olive oil until translucent. Set aside.

In same skillet, saute sausage until browned.

After beans have cooked 40 minutes, add sausage, onions, garlic, tomato sauce, rice/vegetable packet and seasoning packet.

Bring all inredients to a boil, reduce heat and simmer another 30-35 minutes.
Serving Suggestions:

Serve with corn bread and salad for a hearty meal.

For a spicier dish, add your favorite hot sauce to taste.
Ingredients:
White Northern beans, enriched long grain white rice, red beans, dehydrated vegetables (onion, red bell pepper, carrot, celery), maltodextrin, salt, spices (red pepper, black pepper, mustard, thyme, white pepper, celery, cumin), paprika, onion powder, dehydrated chicken broth, rendered chicken fat, garlic powder, extractive of paprika, natural flavor (silicon dioxide added to prevent caking).
