Cherchies Italian Minestrone Soup

A rich blend of all natural freeze-dried vegetables, 100% organic semolina orzo and all natural mouth-watering seasonings makes this Italian mainstay a thick and substantial soup. Makes approximately 7-8 (1 cup) servings.

Additions:
7 cups water
1 cup diced onions
3 tbsp. olive oil
1 can (14.5oz) diced tomatoes
Parmesan cheese
Cooking Directions:
Bean preperation:

Beans are harvested in their natural state and even with the most careful processing, foreign substrances such as small stones may appear. Examine beans closely prior to preparation.

Rinse beans thoroughly in cold water.

Quick soak method: put beans in large pot, adding enough water to cover by 2 inches. Bring to a boil, cooking for 2 minutes. Remove from heat, cover and let sit for 1 hour.

Overnight soak method: in a bowl, cover beans with water and soak overnight.

Drain and rinse beans.
Soup preperation:

To soup pot, add beans and water. Bring to a boil, reduce heat and simmer for 45 minutes.

While beans are cooking, saute onion in olive oil until translucent.

After beans have simmered 45 minutes, add contents of seasoning packet and soup package to beans. Add onions and tomatoes. Bring to a boil, reduce heat to medium low, cover and simmer an additional 15 minutes.

Sprinkle servings with parmesan cheese.

Hint: for spicier soup, use a can or diced tomatoes with green chilies.

White navy beans, 100% semolina orzo, freeze dried red cabbage, freeze dried celery, salt, dehydrated vegetables (tomato, onion and garlic, parsley), basil, black pepper, fennel, oregano, autolyzed yeast extract, natural toamto flavor and rice starch.
