Cherchies Italian Pasta e Fagioli Soup

Pasta e Fagioli may be hard to pronounce ("Pasta Fazool"), but it's so easy to enjoy. Chock full of nutritious white beans, savory seasonings and petite pasta shells, it was developed from Cherchies' Italian family recipe. This classic soup has been enjoyed by many people throughout the world. It makes approximately 9 (1 cup) servings.

Additions:
7 cups water
2 tbsp. olive oil
2 garlic cloves, diced
1 medium onion, chopped
1 can (14.5oz) diced tomatoes
1/2 cup grated Parmesan cheese
Cooking Directions:
Bean preperation:

Beans are harvested in their natural state and even with the most careful processing, foreign substrances such as small stones may appear. Examine beans closely prior to preparation.

Rinse beans thoroughly in cold water.

Quick soak method: put beans in large pot, adding enough water to cover by 2 inches. Bring to a boil, cooking for 2 minutes. Remove from heat, cover and let sit for 1 hour.

Overnight soak method: in a bowl, cover beans with water and soak overnight.

Drain and rinse beans.
Soup preperation:

While beans are standing, saute onion and garlic in olive oil.

To soup pot, add water, beans, contents of seasoning packet and sauteed mixture. Bring to a boil, reduce heat, cover and simmer for 45 minutes.

After 45 minutes, add pasta. Bring to a boil, reduce heat to medium low, cover and simmer an additional 20 to 25 minutes stirring occasionally. Add diced tomatoes and heat thoroughly.

Sprinkle servings with parmesan cheese.
Ingredients:
Northern white beans, enriched macaroni product, salt, dehydrated vegetables (onion and garlic, parsley), sugar, coriander, oregano, basil, black pepper, thyme, celery, white pepper, hydrolyzed soy protien, oleoresin celery, and silicon dioxide added to prevent caking.
