Cherchies Mixed Bean Soup

This is one of Cherchies best selling soups! Several different beans, split pea and barley along with pasta and sundried tomatoes and a tasty seasoning packet make this a family favorite. And it's loaded with fiber. Makes approximately 9 (1 cup) servings.

10 cups water
4 tbsp. olive oil
1 garlic clove, crushed
1 large onion, chopped
 

Cooking Directions:

 
Bean preperation:
  • Beans are harvested in their natural state and even with the most careful processing, foreign substrances such as small stones may appear. Examine beans closely prior to preparation.
  • Rinse beans thoroughly in cold water.
  • Quick soak method: put beans in large pot, adding enough water to cover by 2 inches. Bring to a boil, cooking for 2 minutes. Remove from heat, cover and let sit for 1 hour.
  • Overnight soak method: in a bowl, cover beans with water and soak overnight.
  • Drain and rinse beans.
Soup preperation:
  • To soup pot, add beans, water and seasoning packet. Bring to a boil, reduce heat cover and simmer for 45 minutes.
  • While beans are cooking, saute garlic and onion in olive oil.
  • After beans have simmered for 45 minutes, add, onions and garlic mixture. pasta and sundried tomatoes and bring to a boil. Reduce heat and simmer 20 minutes longer, stirring occasionally.

Serving Suggestions:

  • Try rolling loose breakfast sausage into 1 inch balls, brown, then stir into soup.

This soup has a wonderful combination of flavors. I added sausage as suggested and it blended in perfectly with the other flavors. I made this on a very cold wintery day and it sure warmed us up. Very hearty and satisfying! Made a ton - after pigging out (two adults, two kids) we still had more than half of it left over!
