Cherchies Split Pea & Lentil Soup

Split peas, lentils, pasta and sundried tomatoes make a hearty combination for this delicious soup. Makes approximately 9 (1 cup) servings.

10 cups water
4 tbsp. olive oil
1 garlic clove, crushed
1 large onion, chopped
 

Cooking Directions:

  • Beans, lentils and peas are harvested in their natural state and even with the most careful processing, foreign substrances such as small stones may appear. Examine closely prior to preparation.
  • Rinse peas and lentils with cold water.
  • In a large soup pot, bring water, contents of seasoning packet and pea/lentil mix to a boil. Reduce heat, cover and simmer 20 minutes.
  • Saute garlic and onion in olive oil.
  • After the peas and lentils have cooked 20 minutes, add onions, garlic, pasta and sundried tomatoes, bringing to a boil. Reduce heat, cover and simmer 20 minutes longer, stirring occasionally.

Serving Suggestions:

  • If you choose, add bite sizes pieces of cooked sausage, ham or bacon.

I used to be able to get this soup mix at a local store, but they stopped carrying it. I'm so glad that I've found this new source for it.

This really is the BEST split pea soup ever! I throw a ham bone in with the peas as they are cooking - adds such a great flavor to an already tasty soup! Love it!
