Cooking Directions:

Bring 8 cups of water to a rolling boil. Whisk in soup mix. Reduce heat to Medium and simmer uncovered 10 minutes, stirring occasionally. Salt and pepper to taste. Yield: About 8 one-cup servings.

Delicious soup, easy to prepare as are all Bear Creek soup mixes. I add a few real bacon bits.

This is a good soup. I did not rate this as a great soup because I am not a fan of instant rice. The instruction state simmer for 10 minutes, therefore it must be instant rice. Jesse (10/29/09) brought up an excellent point. This would make a very good soup base. That is, you add whatever ingredients you have available to enhance and customize the soup. Chicken or broccoli come to mind right away. Also, toss in a bay leaf. It helps. One thing you must carefully watch is the simmering time. Simmer too long and the white rice dissolves and you have rice porridge. Rice porridge can be very good but not with this flavor profile. So watch carefully as you cook this soup. Would I purchase this soup again? Yes. As a soup base, not as a stand-alone soup. A comment for Anonymous User (4/28/10). Sometimes it really helps to wash the pot before using it. Cleaning reduces the amount of scum and floaters.

This is the soup that made me a fan of SoupsOnline! The local grocers don't stock it anymore, so I am really glad you do. This is a delicious soup on its own, but even better if you use your imagination and add a little extra to it. It's great as a base for Creamy Rice Asparagus soup, or even with diced bell peppers, chopped celery, sliced carrots and chicken added, as Creamy Chicken with Rice. It has plenty of flavor on its own, but it blends very well with a host of other ingredients. My entire family loves this soup!
