Cooking Directions:

  • Combine contents with 6 cups of water. Bring to a boil.
  • Reduce heat and simmer for 20-25 minutes, stirring occasionally.

Variations/Additions:

  • Garnish with shredded cheddar cheese, fried onion pieces and/or additional corn.
  • Serve in a hollowed out round loaf of bread. Scoop out the center and spoon in the soup.
  • Great with corn bread.

I absolutely love this soup made just as the directions say. It doesn't raise my blood sugars. It has just the right spices to give it a little kick. Great left over for my lunches at work!

We bought and tried the Roasted Corn Chowder and it was delicious. Not a drop left. We put shredded cheese and fried onion pieces on top. I went immediately to the computer to buy more.

This soup is wonderful. I substitute 1 cup of water for milk and it seems to give it a creamier taste.
