A light milky sophisticated soup with the true flavor of Italian artichokes. Freeze-dried vegetables and pure herbs make this soup a highly desired vegetarian version of gourmet fair.

Additions:

 
1 tbs olive oil
1 tbs butter
1 cup water
1/4 cup dry white wine (optional)
3 cups milk
1 cup cream
 

Cooking Directions:

  • Saute packet of bisque soup with one tablespoon olive oil and one tablespoon butter just until moist.
  • Add one cup of water and 1/4 cup dry white wine (optional) and simmer until liquid is absorbed and artichoke pieces are tender.
  • Add 3 cups of milk and simmer for 15-20 minutes.
  • Finish with 1 cup cream.

Variations/Additions:

  • Serve with a few shavings of Parmigiano Reggiano as a garnish.
  • This soup mix makes a great spread or dip:
    • Mix package with 4 cups of sour cream.
    • Refrigerate until vegetables in mix are softened (at least 3 hours).
    • Serve with crackers, chips, veggies, pretzels, etc.

Artichoke pieces, powdered artichoke, dried tomatoes, dried onion, hydrolized vegetable stock (wheat, corn, oat, soy, lactose, yeast, disodium inosinate), parsley, garlic, sugar, spice and herbs.
