Frontier Connecticut Cottage Chicken Noodle Soup

Delicately seasoned with dill this family favorite serves four a chicken and noodle delight!

Additions:

2 tablespoons butter or margarine
6 cups chicken broth
1 whole, boneless chicken breast, cut up into small pieces
Optional: extra chicken parts (2 wings or a leg)
Optional: 1/4 cup white wine

Cooking Directions:

In a 3 or 4 quart pot, toss vegetables lightly in melted butter over low heat. Add broth, turn up heat and bring to a boil. Add chicken breast pieces, reduce heat and simmer covered for 15 minutes. (For an enriched broth, simmer optional extra chicken parts for 30 minutes in the 6 cups of broth. Remove parts, reserve broth and proceed with recipe above).

Bring back to a full boil and add noodles. Reduce heat and simmer, uncovered, for 10 minutes. Stir in wine, if desired. Turn off heat and allow it to cool a few minutes before serving.

Inventive Soup Variations:

 
For Frontier Soups House Special Fried Rice recipe: Add 1 cup of long grain white rice while sautéing soup mix. Stir in 4 cups chicken broth. Cover and simmer on low 15 minutes. Add in noodles, simmer 10 minutes more until all liquid is absorbed and serve!

This is one of the best soups I have found! I was dubious about this soup initially. After all, I have to supply the chicken broth and the chicken. What is left for a soup? Noodles? Well, they provide a lot more than just noodles. They use freeze dried vegetables (more expensive but much, much tastier) and fresh herbs in addition to the noodles. Absolutely worth the cost! And the peas were actually peas, tasty and fresh (yay!) not dehydrated crunchy tasteless lumps you find in other soup products. Would I purchase this soup again? Definitely yes!
