Additions:
1 1/4 cup celery, chopped (include some leaves)
8 oz boneless, skinless chicken breast, cut into 3/4" pieces
4 oz smoked turkey sausage, quartered and sliced into 1/2"pieces
1 can (15oz) whole peeled tomatoes
6 cups water
1 tsp salt (or to taste)
1/4 cup red wine or BBQ sauce
1/4 cup fresh parsley (chopped)
Cooking Directions:

Sort through and rinse the beans. Spread beans across the bottom of your slow cooker.

Layer the celery evenly over the beans. Layer the meats evenly over the celery.

Place the tomatoes (including the juice) into a medium bowl. Crush. Layer them (including juice) evenly over the top of the meats.

Sprinkle contents of spice packet (included) evenly over the top of the layered ingredients. Tuck the bay leaf down into the vegetables.

Pour water over everything. DO NOT STIR.

Place lid securely on your slow cooker.

Turn on your slow cooker and cook on high for 5 hours or on low for 8-9 hours.

30 minutes before serving, add the salt, wine or BBQ sauce, and the parsley. Stir these into the soup and replace lid. Cook soup on low to complete. Remove and discard the bay leaf before serving.
Vegetarian version: omit adding meats. Instead, at step 3, add 1/2 cup of diced potatoes. Then, at step 8, add 1/2 cup sweet corn.
Serving suggestion: serve over cooked Cajun rice or crumbled homemade cornbread along with a fresh garden salad and plenty of your favorite hot sauce.
