Slow Cooker Gourmet Hudson River Valley Split Pea Soup

Thick as a fog and so easy to make. Fresh celery, carrots, and a ham bone (great without it too) and a loaf of crusty bread is all this family favorite needs to be ready when you get home from a hard day in the trenches.

Additions:

 
1 cup celery, chopped (include some leaves)
1 cup carrots, chopped
1 tsp salt (or to taste)
1 meaty ham bone or 1/4 cup smoked ham, chopped
6 cups water
 

Cooking Directions:

  1. Sort through and rinse the split peas. Spread peas across the bottom of your slow cooker.
  2. Layer the celery and carrots evenly over the peas.
  3. Sprinkle the salt and contents of spice packet evenly over the top of the layered ingredients. Tuck the bay leaf down into the vegetables.
  4. Place the ham bone or chopped ham over spices.
  5. Pour water over everything. DO NOT STIR.
  6. Place lid securely on your slow cooker.
  7. Turn on your slow cooker and cook on high for 4 1/2 - 5 hours or on low for 8-9 hours.
  8. Remove ham bone onto the cutting board to cool. Discard bones and fat. Dice the meat fine and stir into soup. Locate and discard bay leaf before serving. Soup will thicken as it cools. 
Vegetarian version: omit ham and replace it with 1/4 cup soy-based smoky flavored meat substitute.
 
Serving suggestion: top with herbed croutons and serve with crested bread.
