1 cup fresh mushrooms, chopped
1 lb lean stew beef cut into 3/4" cubes
1 can (28oz) tomatoes, whole peeled
2 tsp salt (or to taste)
1/2 cup yellow corn meal (optional)
3 cups water
 

Cooking Directions:

  1. Sort through and rinse the split peas. Spread peas across the bottom of your slow cooker.
  2. Layer the mushrooms evenly over the peas. Layer beef evenly over mushrooms.
  3. Place the tomatoes (including the juice) into a medium bowl. Crush. Layer them (including juice) evenly over the top of the beef.
  4. Sprinkle the contents of spice packet evenly over the top of the layered ingredients.
  5. Pour water over everything. DO NOT STIR.
  6. Place lid securely on your slow cooker.
  7. Turn on your slow cooker and cook on high for 4 - 5 hours or on low for 8-9 hours.
  8. 30 minutes before serving, add corn meal and salt. Stir these into the chili and replace lid. Cook on low to complete. 
Vegetarian version: in place of the beef, add 3/4 pound of water-packed tofu which has been frozen, thawed, and crumbled in a colander.
 
Serving suggestion: top with shredded cheddar/jack cheese, sour cream, chopped onions, or your favorite spicy salsa. Serve with soft flour tortillas or your favorite corn chips.

Small red, kidney, pinto, black and pink beans, dried onions, dried green peppers, spices, jalapeno, cayenne and black pepper.
