Slow Cooker Gourmet Indiana Farmstand Chicken Corn Chowder

Outstanding! Great served with herbed croutons and a fresh salad.

1 cup all purpose potatoes, chopped
10 oz boneless, skinless chicken breast, cut into 3/4" pieces
5 cups water
1 tsp salt (or to taste)
1 1/2 cups sweet corn
3/4 cup half & half
2 Tbsp cooked crumbled bacon
 

Cooking Directions:

  1. Sort through and rinse the beans. Spread beans across the bottom of your slow cooker.
  2. Layer the potatoes evenly over the beans. Layer the chicken evenly over the potatoes.
  3. Sprinkle contents of spice packet (included) evenly over the top of the layered ingredients. Tuck the bay leaf down into the vegetables.
  4. Pour water over everything. DO NOT STIR.
  5. Place lid securely on your slow cooker.
  6. Turn on your slow cooker and cook on high for 4 1/2 - 5 hours or on low for 8-9 hours.
  7. 30 minutes before serving, add the salt, corn, half & half, and bacon. Stir these into the soup and replace lid. Cook soup on low to complete. Remove and discard the bay leaf before serving. 
Serving suggestion: top with herbed croutons and serve with a fresh garden salad.
