Cholent Rosemary Chicken is an outstanding dish that after adding brown rice becomes a healthy and hearty meal.
Cholent is a traditional Jewish meal that, for generations, has been prepared on Friday before the Sabbath begins. Slow cooker all night, this savory stew is the main course at Saturday’s noonday meal.

1 Tbsp. vegetable oil
1 cup small red or white potatoes cubed
1.25lbs. boneless chicken breast and/or thighs cut into 3/4" pieces
1/3 cup brown or white rice
1 bay leaf
6-8 eggs
4 cups chicken stock
6 cups water
Salt & Pepper to Taste
 

Cooking Directions:

  1. Coat the sides and bottom of the slow cooker or pot with vegetable oil.  Sort through and wash the beans.  Spread the beans across the base of the slow cooker or pot.
  2. Layer the potatoes over the beans, followed by the chicken, bay leaf and rice.
  3. Sprinkle the contents from the veggie/spice packet over the layered ingredients.
  4. If you are including the eggs, now place the eggs down the side of the pot.
  5. Slowly pour vegetable or chicken stock and water over everything.
  6. Place the lid on the pot and, depending on the method chosen, either turn on the slow cooker or place the pot in the preheated slow oven.
  7. Cook for 12-15 hours.  Check and adjust water level after 10-12 hours.
  8. Before serving, add salt and pepper to taste along with your favorite flavor enhancements.  Remove bay leaf and discard.  Remove the eggs at this time to be served as the first course.
Vegetarian version: omit the chicken.
 
Serving suggestion: 1/3 cup white wine, 1/4 cup apricot jam or fresh rosemary diced.
