5¼ cups water
6 boneless, skinless chicken thighs (about 3 to 3½ lbs.)
1 lb. smoked or spicy sausage, sliced into 1-inch pieces
½ lb. raw shrimp shelled (optional)
1. In Crock-Pot® slow cooker, combine the seasoning mix with water, whisking until completely incorporated.
2. Add chicken thighs, cover and cook for 4 - 6 hours on high or 8 - 10 hours on low. Set yellow soup base packet aside for later.
3. Thirty minutes before the end of the cooking time, remove chicken thighs and roughly shred. Combine yellow soup base packet with 1 Tbsp. cold water; add to Crock-Pot® slow cooker while stirring. Add rice/vegetable packet, sausage and shrimp (if using) to the Crock-Pot® slow cooker, replace lid and continue to cook.
You can use any combination of white and dark meat for this recipe; just try to use roughly the same amount of meat.
