Frontier Florida Sunshine Red Pepper Corn Chowder

A delicous corn chowder with a hint of heat - one of the better corn chowders we have tried!

Preparation Time: 10 minutes

Additions:

5 cups chicken (or vegetable) broth
1 cup half and half cream
Optional: 2 cups scallops, peeled shrimp or cooked cut-up chicken

Cooking Directions:

Bring broth to a boil in a 2 or 3 quart saucepan and add dried soup mix ingredients. Reduce heat and simmer, covered, for 15 minutes. Add cream, continue cooking on low for 10 minutes with seafood, if desired. Turn off heat, let stand 5 minutes and serve.

Inventive Soup Variations:

Option 1: For a festive holiday chowder or to delight vegetarians, add one cup each chopped fresh broccoli and cauliflower to the mix and serve with grated cheese on top!

Option 2: May be served chilled. Simmer soup according to above cooking instructions for 30 minutes. Cool completely on stovetop. Refrigerate for 2 hours or overnight. For an elegant presentation, soup may be pureed in a food processor, food mill, or with a hand held blender. Stir in cream. Garnish with fresh dill and enjoy!

Used fat free half and half and chicken. Good with a crusty bread and salad.

Didn't have cream so used milk plus some half-and-half; really good texture and wonderful taste! Added shrimp...delicious!

Loved this soup - a perfect mix of ingredients. Made this with whole milk (instead of half and half) and chicken broth and it was awesome.
