Frontier Mississippi Delta Tomato Rice Soup

Additions of chicken broth and canned tomatoes create this classic, home style soup!

6 cups chicken broth
1 28-ounce can crushed tomatoes in puree
2 tablespoons brown sugar

Cooking Directions:

Bring broth to a boil in a 3 or 4 quart, non-aluminum pot. Add mix to broth. Add tomatoes and brown sugar and bring to a boil. Reduce heat and simmer slowly, covered, for 20 minutes.

Inventive Soup Variations:

Option 1: Add 3/4 pound fresh shrimp, shelled and deveined. Simmer 2-3 minutes until opaque. Garnish with 1/2 cup crumbled feta, blue or parmesan cheese. 2. For a cream of tomato soup, gently heat 2 cups cream (or buttermilk for a more piquant taste) and add to tomato base before serving. 3. Or, for a spicier soup add 1/4 teaspoon cayenne pepper.

Option 2: May be served chilled for an elegant summertime soup. Prepare according to cooking instructions. Simmer soup 30 minutes. Cool completely on stovetop. Refrigerate for 2 hours or overnight. Stir in cream before serving. Garnish with fresh basil and enjoy!

This soup turned out really good and it was quite simple to prepare. We used Better Than Bouillion chicken base (you can get this at SoupsOnline as well) and a can of diced tomatoes that I ran through the food processor. Next time I will do the shrimp with cumbled blue cheese on top - after having this, I can see how blue cheese would really be a wonderful addition to the flavor mix!
