Frontier Oregon Lakes Wild Rice and Mushroom Soup

A classic soup prepared with the addition of broth and cut up chicken breast. Variation: Add a cup of cream for the last ten minutes of cooking.

Additions:
6 cups chicken broth
1 whole, boneless chicken breast, raw or precooked (2 halves)
Optional: 1 cup white wine or 1/2 cup cream
Cooking Directions:
In a 2 or 3 quart saucepan bring broth to a boil. Add dried soup mix ingredients. Lower heat and simmer, covered, 20 minutes. Add chicken and simmer 20 minutes longer. Add wine or cream if desired. Let stand five minutes and serve.
Inventive Soup Variations:
We call this variation the Hunter’s Bounty because wild rice and mushrooms are natural accompaniments to any fowl substitute such as pheasant, quail or duck instead of chicken for a sophisticated soup supper.
Ingredients:
Wild rice, shiitake mushrooms, carrots, petite peas, onion, celery, green onion and herbs; Gluten-free.
