Maggie and Mary's Tavernhouse Cheese Soup

One of Maggie and Mary's first experiences together with soup was way back in college in a small cabin in the north woods of Minnesota. That first pot of soup was a beer cheese soup. Who knew at the time that this would be the beginning of a successful company and career for both. This soup mix commemerates that first pot.

4 1/2 cups water
 

Cooking Directions:

  • Pour 4 cups hot water into soup pot.
  • Add soup mix, blend well with whisk.
  • Cook over low heat 30 minutes (with lid on), stirring occasionally; do not boil.
  • For thicker soup, simmer a bit longer with lid off. For thinner soup, add a bit more water.

Variations/Additions:

  • To make a true beer cheese soup, replace 1 1/2 cup of water with a can of your favorite beer.
  • Add diced ham or crumbled, cooked bacon.
  • Add fresh or frozen broccoli, cauliflower, potatoes or other favorite vegetables.

My Dad is currently undergoing chemo. He has lost most of his taste for foods; however, he loves this soup! I make it (or the creamy wild rice) every single evening! My whole family loves it, too!

Tried this twice, first with water and it was pretty good. The second time, I replaced some water with beer and melted in some sharp cheddar cheese and wow!
