Buckeye Beans Veggie Bean Soup

This easy-to-make homemade soup is nutritious and heartwarming. The beans and whole grains used are excellent sources of protein, certain B vitamins, and many minerals and fibers. Add your own flair by adding other vegetables!

Additions:
4 cups water
1 large onion, chopped
1 potato, peeled and chopped
2 cans (14.5 oz) tomatoes, no salt added, chopped
1 can (15 oz) tomato sauce, no salt added
Cooking Directions:

The night before the soup is to be served, rinse and sort out any foreign material from beans.

Place beans and 4 cups water in a kettle and let soak overnight.

Drain off the water from the beans.

Add 4 cups fresh water, bring to a boil for 45 minutes, then add remaining ingredients to beans.

Cover and simmer for four hours or so stirring occasionally until beans are tender.

Feel free to add more veggies the last hour of cooking. Try chopped celery, carrots, broccoli, zucchini, peas, etc.

Beans, peas, lentils, barley, chili powder, salt, garlic, onion and spices.
