Alessi Lenticchie Sicilian Lentil Soup

"Lenticchie" is the name given to the very simple yet delicious soup known as lentil. The brown lentils used in this Sicilian classic are embellished with small cut pasta and bits of carrot, garlic and of course, finocchio ( the bulb of the fennel plant).

4 1/2 Cups water
 

Cooking Directions:

  • Bring water to a boil in a 3 quart pot.
  • Add mix and stir for one minute. Stir frequently to avoid possible overflow.
  • Reduce heat to medium and cook uncovered for 12 minutes. Soup should bubble during cooking. Stir occasionally.
  • Remove from heat. For authentic Italian taste, stir in 1 tablespoon extra virgin olive oil. Serve and enjoy.

Tastes great. I didn't know what to expect from a dehydrated soup but it tastes homemade when it's cooked up. We usually add extra water, macaroni, and spices to stretch it and top with grated hard cheeses. Easily dinner for 2 which makes it about $2/person with the extras. Can't beat the taste for the price and convenience.

I love this soup. When I have some leftover smoked ham, I add chunks of it to the soup and it tastes almost as good as my Sicilian grandmother's soup (and that's pretty good!)

My father-in-law gave me a pouch -- I tried this once, and I just had to find/buy more of it! Delicious -- wow! (And I like to make my soup from scratch.)

Very good flavor and thick with pasta and lentils. Soaked this soup up with crusty Italian bread - Yummy. Perfect amount for two for lunch.
