Alessi Raviolini in Brodo Chicken Soup

There is a saying about soups in Southern Italy that states,"Sette cose fa la zuppa" which translates to "Soup does seven things". It relieves your hunger, quenches your thirst, fills your stomach, cleans your teeth, makes you sleep, helps you digest and colors your cheeks." This soups is a lot like chicken noodle soup with an Italian flair! "Raviolini in Brodo" is real Italian comfort food. Plump, cheese stuffed raviolini afloat in rich rasting, flavorful chicken broth make for a satisfying single bowl meal. Bits of carrot, celery, onion and chicken add to the balance of tastes.

5 Cups water
 

Cooking Directions:

  • Bring water to a boil in a 4 quart pot.
  • Add mix and stir for one minute.
  • Reduce heat from high and cook uncovered for 15 minutes. Soup should slightly boil for the entire duration of cooking.
  • Remove from heat. For authentic Italian taste sprinkle with grated cheese (optional). Serve and enjoy!

This is the first time I tried this soup. I would definitely purchase it again. I already know that this type of soup should be simmered an addition 15-20 minutes for the contents to rehydrate properly.

I don't know what I was expecting; an old Italian woman fussing over a soup pot all day and producing a spectacular, wonderful soup that sings to you as you enjoy every flavorful drop. Back to the real world of packaged soups. This is a good quality bouillon-based chicken soup. It has a gimmick by using cheese-filled mini-raviolis for noodles. The taste is good enough but the raviolis and vegetables did not properly rehydrate and were hard and crunchy. I would recommend simmering an additional 10-15 minutes in a covered pot (total: 25-30 minutes.) The finished soup was also somewhat thinner than I prefer but that is just my personal preference. Would I purchase this again? Maybe so, maybe not. The sale price is very good. If I was on a very strict budget I would definitely consider it.
