Frontier Virginia Blue Ridge Broccoli Cheddar Soup

A hint of curry with the addition of shredded cheddar cheese makes this cheddar classic a lovely appetizer or luncheon soup.

5 cups chicken broth
1 cup cream (heavy, half & half or milk)
1 cup shredded, cheddar cheese (4 ounces)

Cooking Directions:

In a 4 quart pot bring broth to a boil. Add soup mix, lower heat and cover, simmer 30 minutes. Add cream and continue cooking on low 5 minutes more. Stir in cheese, allow to stand 5 minutes and serve.

Inventive Soup Variations:

 
For a summertime soup, this soup can be served chilled. Prepare as above, but simmer for 45 to 60 minutes and omit the cheese. Cool completely on stovetop. Chill in refrigerator 2 hours or overnight. For an elegant presentation, puree soup using a food processor, food mill or hand blender. Peel, remove seeds and dice one large cucumber. Sprinkle a spoonful to each bowl before serving.

So quick & easy to make. We used skim milk and created a light soup that was perfect for when the weather was still too hot to want the stove on for long.
