Frontier Appalachian Trail Corn Bread Mix

The world's best corn bread mix makes an 8x8 inch square pan or use a muffin tin and fill a basket with delicious corn muffins for any meal. For breakfast we like to split the cornbread square in half and spread with butter and warm syrup.
Serves: 6-8 Preparation Time: 5 minutes Cooking Time: 15-20 minutes
Serve this delicious corn bread with soup for supper or with butter and hot syrup for breakfast.

Additions:
1 cup buttermilk 2 tablespoons butter 2 large eggs
Cooking Directions:

Preheat oven to 425 degrees.

Melt butter in 8x8 pan in oven - butter may turn brown. Then, swirl butter in pan to coat bottom and sides.

Pour remaining butter from pan into mixing bowl. Blend in eggs and buttermilk.

Add contents of cornbread mix and stir thoroughly. Pour mixture into preheated pan.

Bake for 13 to 15 minutes until cornbread is firm on top and lightly browned.
Southern Style Corn Bread Recipe:
Ingredients 1 package Appalachian Trail 1 8-ounce can cream style corn, drained or kernals from 3 ears fresh corn 1 cup shredded cheddar cheese 1 cup buttermilk 2 eggs, lightly beaten 4 Tablespoon melted butter Optional: 5 ounces can of green chilies
Blend eggs and buttermilk. Add contents of corn bread package. Stir in corn, cheese, green chilies or seasonings. Melt butter in 9 x 13 inch pan in preheated oven. Swirl the butter to coat the pan, then add melted butter to the batter and stir. Pour batter into pan and bake 18 to 20 minutes at 425 degrees.
Ingredients:
Cornmeal, flour, sugar, baking powder, baking soda and salt.
