Frontier Montana High Plains Wheat Berry Chili

Luscious whole grain wheat berries and a large red santaka chili pepper, along with a sensational seasoning packet, make this a hearty, full flavored chili. The wheat berries retain a juicy texture that our tasters love!

1 pound ground turkey
1 14-oz can beef or vegetable broth
1 28-oz can tomato pieces
Optional 1/2 cup red wine

Cooking Directions:

 
Soak wheat berries in cold water overnight, then bring to a simmer in a pot of fresh water for 50 minutes. In a separate pot, sauté ground turkey in 2 tablespoons oil. Stir in the contents of seasoning packet and, if desired, add the red Santaka chili pepper for more heat. Add broth, drained wheat berries and tomatoes, and simmer 1 hour. If desired, add optional wine and serve with grated cheddar cheese or sour cream on top, and round up the campers for this hearty whole grain chili!
 

Vegetarian Version:

1 large baby eggplant, diced not peeled.
1 large sweet onion, chopped.

Cut up one large eggplant into 1/2 inch cubes, lightly salt and let stand fifteen minutes. Heat 4 tablespoons oil in 4 quart pot, add eggplant and one large, sweet onion chopped, tossing and turning to brown lightly. Add broth, wheat berries and tomatoes and simmer 1 hour. Serve with grated cheese, if desired.

Crock Pot Recipe:

Recommended crock pot: 3-4 quart

Additions:

2 T. Oil
1 Lb. Ground Turkey or Chicken
2 14-oz. Cans Beef Broth
1 28-oz. Can Tomato Pieces
Vegetarian Version: substitute 1 large baby eggplant, diced, not peeled;
1 large sweet onion, chopped for the turkey, and
Vegetable broth for the beef broth

Slow Cooker Directions:

Preparing the wheat berries the night before:

  • Place wheat berries in large bowl with 2 quarts fresh water, place in refrigerator overnight.

Assembling the soup in the morning:(or the night before)

  • In large skillet saute ground turkey in oil. Stir in contents of seasoning packet.
  • Transfer the turkey mixture to bowl of slow cooker along with broth, tomatoes and red Santaka chili pepper.

(May cover and refrigerate over night.)

  • Drain the wheat berries and add to crock pot. Stir and cook on LOW for 8 hours.
  • Serve with grated cheddar cheese or sour cream on top.
