Slow Cooker Gourmet Lewis and Clark Lentil & Sausage Stew

A favorite from the northwest. Spicy sausage, and garden fresh veggies will make this dinner disappear fast! Great topped with sour cream.

Additions:
1 cup carrots, chopped
6 oz smoked turkey sausage, quartered and sliced
1 1/2 cups fat free chicken broth
3/4 tsp or to taste
1/4 cup fresh or frozen spinach, chopped
4 cups water
Cooking Directions:

Spread carrots across the bottom of your slow cooker.

Layer the sausage evenly over the carrots.

Sort through and rinse the lentils. Spread lentils across sausage.

Add chicken broth. Sprinkle salt and the contents of the spice packet evenly over top of layered ingredients. Tuck the bay leaf down into the vegetables.

Pour water over everything. DO NOT STIR.

Place lid securely on your slow cooker.

Turn on your slow cooker and cook on high for 2 1/2 - 3 hours or on low for 3 1/2 - 4 hours.

15 minutes befoer serving, add spinach. Stir into the soup and replace cover. Cook on low to complete. Locate and discard bay leaf before serving.
Vegetarian version: replace turkey sausage with soy-based sausage and the chicken broth with vegetable broth.
Serving suggestion: top with sour cream and chives.
