Slow Cooker Gourmet Minnesota Lake Country Chicken and Wild Rice Soup

Northern Minnesota is especially known for two things: lakes and wild rice. This soup captures this essence in an easy to prepare slow cooker recipe.

1 pound boneless chicken breast or thighs, cut into 3/4" pieces
1 1/2 cup fresh mushrooms, chopped
1 cup fat free chicken broth
9 cups water
Salt to taste
 

Cooking Directions:

  1. Rinse the rice under cold water. Drain.
  2. Place chicken in bottom of slow cooker.
  3. Layer mushrooms over chicken.
  4. Sprinkle contents of the spice packet evenly over top of layered ingredients. Tuck the bay leaf down into the vegetables.
  5. Combine chicken broth and water and pour over layered ingredients.
  6. Sprinkle rice evenly into water. Do not stir.
  7. Place lid securely on your slow cooker.
  8. Turn on your slow cooker and cook on high for 3 hours or on low for 5 hours.
  9. Add salt, additional seasonings, and additional water to your taste. Locate and discard bay leaf before serving.

Brown rice, wild rice, dried onions, carrots, and celery, spices, garlic, black pepper, bay leaf.

Very spicy - Grandchildren wouldn't eat. Used more chicken broth for added flavor. cooked on stove top for 45 min until rice was done. The package was past the expiration date by 1 month when received.
