Additions:
4 strips bacon (optional)
2 cups onion, chopped
3 tsp garlic, minced
5 cups water
2 cups Clamato juice (optional)
1 cup white wine or sherry
1 14.5oz can peeled tomatoes, diced
1 10oz can whole baby clams (optional)
1 lb frozen, uncooked shrimp, thawed (optional)
Tabasco sauce (optional)
Cooking Directions:

In a small pan, cook bacon, drain and reserve bacon fat. Crumble bacon into bits and set aside.

In a large stock pot, saute vegetables & garlic in 2 tbsp. bacon fat.

Add bacon, water, calamato juice, wine, beans, spice packer contents and tomatoes.

Bring to a boil, simmer covered for 2 1/2 to 3 hours stirring occasionally.

Add shrimp and clams, simmer covered for 30 minutes.

Add tabasco sauce and salt to taste.

Additional water may be added to thin during cooking if soup becomes to thick.
