Additions:

 
4 strips bacon (optional)
2 cups onion, chopped
3 tsp garlic, minced
5 cups water
2 cups Clamato juice (optional)
1 cup white wine or sherry
1 14.5oz can peeled tomatoes, diced
1 10oz can whole baby clams (optional)
1 lb frozen, uncooked shrimp, thawed (optional)
Tabasco sauce (optional)
 

Cooking Directions:

  • In a small pan, cook bacon, drain and reserve bacon fat. Crumble bacon into bits and set aside.
  • In a large stock pot, saute vegetables & garlic in 2 tbsp. bacon fat.
  • Add bacon, water, calamato juice, wine, beans, spice packer contents and tomatoes.
  • Bring to a boil, simmer covered for 2 1/2 to 3 hours stirring occasionally.
  • Add shrimp and clams, simmer covered for 30 minutes.
  • Add tabasco sauce and salt to taste.
  • Additional water may be added to thin during cooking if soup becomes to thick.

We love this soup! I add all the optionals but do not add salt. It is so tasty, always a crowd pleaser.
