Additions:
8 cups water
1 4oz can Mexican-style reen chiles, chopped
1 tsp salt
1/4 cup olive oil
2 cups onions, chopped
3 tsp garlic, minced
2 cups green bell pepper, chopped
2 cups smoked ham, cubed (optional)
Sour cream (optional garnish)
Scallions, chopped (optional garnish)
Cooking Directions:

In a large stock pot, bring water, chiles, beans and salt to a boil; reserve spice packet.

Simmer soup, covered for 1 1/2 hours.

Add ham and simmer, covered for 1 hour.

While soup is simmering, in a large pan, saute onions, green bell peppers and garlic in oil, set aside.

Add the sauteed vegetables with the spice packet contents.

Simmer, covered for an additional 30 minutes.

Salt and pepper to taste.

Garnish with sour cream and scallions if desired.
