Additions:
8 cups water
2 tbsp olive oil
2 cups onions, chopped
1 cup sweet green bell pepper, chopped
1 cup celery, chopped
4 tsp garlic, minced
1 tsp salt
1 ham hock (about 3/4 lb)
3 tbsp tomato paste
1/2 lb andouille or other smoked sausage, halved lenthwise and sliced
Cooking Directions:

In a large stock pot, saute vegetables & garlic in olive oil, salt and spice packet.

Add water, beans, ham hock and tomato paste.

Bring to a boil, simmer, covered, for 2 hours.

Brown sausage in a skillet and stir into soup.

Cook soup about 30 minutes more or until beans are tender.

Add water during cooking time if soup becomes too thick.

Beans, Red Bell Pepper, Tomato, Garlic, Spices and Paprika.
