Additions:

 
3 1/2 cups water
1/4 cup olive oil
5 slices bacon, chopped
1 cup onion, chopped
1 zucchini, diced
1 carrot, diced
2 garlic cloves, minced
2 cups cabbage, shredded
1 1/2 cups kale (stems removed), chopped
2 14.5oz cans chicken broth
1/2 tsp salt
Parmesan cheese, grated
 

Cooking Directions:

  • In a large saucepan, cover contents of bag (excluding pasta and spice packets) with 2 inches of water and cook until tender about one hour.
  • Heat olive oil in a large stock pot over moderate heat. Add bacon and cook until browned.
  • Add union and cook 2 minutes.
  • Add zucchini, carrot and garlic and cook until wilted, about 4 minutes.
  • Add cabbage and kale and cook stirring until wilted, about 5 minutes.
  • Add water, broth, pasta, spice packet and salt. Cover and simmer for 1 hour.
  • In a food processor, combine half the beans and some of their cooking liquid and puree until soft.
  • Combine all inredients and serve with Parmesan cheese.
